Nick DiGiovanni Teaches Us How To Make The Ultimate Mac & Cheese

Nick DiGiovanni is one of those culinary content creators you hear about, perhaps dismiss, and then keeping hearing about more and more and more and… Because the dude is big. DiGiovanni took a stint as a contestant on Gordon Ramsay’s MasterChef and leveraged that moment to create an entire digital empire, which, in 2025 extends way past URLs. His journey from amateur chef and the first Harvard undergraduate with a self-constructed food degree to tween heartthrob with his own salt available in Walmart stores throughout the US, author of a best-selling cookbook and over 20M subscribers on Youtube reveals heaping helpings of brains, passion, determination and ingenuity.

DiGiovanni’s latest claim to fame outside of MasterChef and being a protege of Sir Ramsay, is the construction of humongous versions of American food staples like chicken nuggets, sushi rolls, fortune cookies, and cake pops, which have continued to produce viral moments and break Guinness World Records. We caught up with the chef on the eve of the launch of his latest big venture, Nick’s Kitchen, a new Youtube channel dedicated to teaching home cooks of every age simple recipes and techniques with Food Network quality production, and went in-depth on how to make his signature mac-n-cheese, including why he uses five different cheeses to get the best flavor, texture, and melt.

Nina Gallant

What can we expect from your new YouTube channel and how will it deviate from content that you’re already putting out?

This one will be called “Nick’s Kitchen,” and the idea was that there hasn’t been a really high quality set of simple recipe videos done in a long time. Back in the day we had a lot of Food Network people watching on TV and Food Network reigned for a really long time, it was the go-to spot for recipes and things.

What I’ve realized on YouTube is that people go and they start out with channels that are supposed to be all about food, kind of like myself. It evolved over time into this idea of food entertainment where it’s kind of a little bit clickbaity and gimmicky – there’s totally a place for it because people shift to it a lot of the time, the reason people shift to it is because it just gets more viewership and it’s more widely appealing.

I feel like there’s a gap and there’s a place for really high-quality recipe videos. Simple, no gimmicks, nothing over the top, videos that are all about 10 minutes and straightforward. We put together a really great team. We spent a ton of time doing the recipe testing and putting together the set – it’s beautifully shot. The sound is all there, so many different angles are there. We’re being serious about the color work afterward – it really blew my mind. It’s really exciting – we can come to YouTube with this modern food network, is my thought.

Jumping into the recipe — what makes your Mac and Cheese so special?

When I think of any type of food, the first word I think about is balance. I apply that to every single recipe, and I think that’s what makes so many of the special foods that you eat in your life as special as they are. Take the mac and cheese cheese for an example, I think the first thing you need to think about is that there’s two parts. There’s macaroni and there’s cheese.

For the macaroni, I veered away from traditional elbow Mac and use Cavatappi, which is a little bit longer, but more importantly has those nice ridges that hold the sauce a little bit better. That’s a first small little change that I make where it does make all the difference – it makes each bite a little bit more fulfilling because they’re a little bit of a bigger piece. Those ridges are really important to hold all that cheesy sauce.

The other side, more importantly, is the cheese. I use five different types in my recipe and it sounds like a lot, but often mac and cheese has a lot of different types of cheese in it.

There’s no right or wrong answer for the five different types or however many different types that you use. That one (i.e. the cheeses) I leave up to people, I’m like, “What do you like?” I have cheddar in there because I love cheddar cheese. I have mozzarella in there, I have a little bit of goat cheese in there and I have a reason for each cheese.

I think it’s all about balance and it helps so much to think about every step of the process in the recipe. It ends up giving you this perfectly balanced, creamy mac and cheese that hits on everything and boiling it on the top at the end with a little bit of Parmesan, gives that extra saltiness and even some crunch. With regard to texture, flavor, general gooeyness and creaminess, that balance between that actual thick cream itself and the cheese pull that you get, it has everything. That’s what excites me about it.

Is there a specific brand of pasta that you prefer for cavatappi?

I don’t care so much about the brand. Once you put all that cheese and all that sauce on it too, if it’s a good quality pasta from the start, it’s hard to tell once you have all that cheese and all that seasoning on it.

Nina Gallant

In your recipe, you use both milk and cream, some mac and cheese recipes only use one or the other, so why both?

Cream is fattier, heavier, more decadent, and having the balance between milk and cream, gives you that perfect blend between that leanness that you have in a regular whole milk compared to a heavy cream, and then also that really thick creaminess. You can get away with using just milk, because you can thicken it up as much as you want if you’re using flour. I didn’t want to add any fillers. There’s no roux, there’s no flour base that helps to thicken it all up. Instead, I’m using cheese and not too much liquid and the dish works out really well that way.

My thought was if I can create this mac and cheese without having to add fillers and thickeners really like a flour, like a roux, then I would try without it because sometimes a roux can lead to Mac N Cheese being a little bit mealy, if you don’t pull it off perfectly.

Your recipes calls for dry mustard. Why do you use dry mustard versus other types of mustard?

With dry mustard, I’m trying to control the amount of liquid in the recipe, it’s a little bit easier to make sure that everything comes out the way I want it. If you only have regular mustard and you need to use that, the recipe’s going to be fine. It’s easy to control the amount of mustard you’re putting in when you have that powdered dry mustard because that way you can really see that you’re only adding this tiny little pinch, it packs a punch, and because I’m using so little, it’s nice to put a little sprinkle of that powder.

I don’t think there’s anything wrong with using regular mustard, but I will say if you want to be really specific, you could argue that sort of using unsalted butter instead of a salted butter in a recipe, it’s kind of helping you to control something, it’s helping you to control the moisture content.

Nina Gallant

Is that the same rationale behind why you prefer smoked paprika to other types of paprika in this recipe?

Smoked paprika is a personal preference. Some people don’t put any paprika in their mac and cheese, and some people do. I first tried making it with paprika and without, the first thing that comes to my mind is that I use smoked paprika over regular because I think it’s delicious. Typically I use smoked paprika as opposed to regular paprika in any recipe that calls for paprika, if it works.

Getting into the cheeses, you laid out the rationale for each one in the recipe that you shared. Are there any out of the five that are essential for any mac and cheese recipe?

I’ll tell you why I have each one. The cheddar is for sharpness and it gives you that classic mac and cheese flavor. The gouda is for creaminess and has a mild nutty taste. The goat cheese is tangy and creamy, but doesn’t break apart and have that same texture as the other cheeses, it adds a different note on texture. Mozzarella I think is important in a mac and cheese to give you the stretchiness and the gooeyness you’d want. Lastly the Parmesan gives a salty, umami richness for the topping. They all work together, but you can adjust the cheeses however you want – it’s all about personal preference.

I see that you listed olive oil on the recipe but not as one of the ingredients. Is there a specific purpose in the recipe for the olive oil?

That’s to pour over the pasta once you cook it just so it doesn’t stay together. It’s as simple as a quick little drizzle to make sure nothing’s sticking.

Nina Gallant

What tools would you say are necessary for a home cook that’s looking to make this recipe? If you were to list these are the things that you need and ready to outside of the ingredients to make this.

A grater for sure, a simple good box grater of some kind. I love a microplane for putting that Parmesan cheese over the top. A grater is really nice, but not an absolute must – it gives such a fine kind of fluffy dust thing of cheese and it’s hard to replicate that with any other tool or in any other way. The nice thing about Mac N Cheese is that it’s pretty easy, so you don’t really need all many different pieces of equipment to make it. A heavy bottom pot is nice to cook it all in.

What are some challenges in making the dish that maybe people who haven’t made mac and cheese before should be aware of?

Sometimes the challenging thing and the toughest part is making that base, that creamy sauce, without getting it either clumpy or breaking it. You can put it on high heat and it starts to get oily and separate. If you can focus on being gentle and thoughtful with the base sauce, then it’s hard to kind of mess up the actual pasta.

If you can focus on making that really gentle base sauce, then the pasta itself is pretty hard to mess up as long as you can go and cook that al dente, since it’ll cook a little bit more once you do that final bake. The key really for a beginner especially, is the focus on that being really gentle and being really careful and watchful of the base of creamy sauce as well.

What are some other ingredients that you don’t use in your recipe that you may recommend to people to add some crunch or spice it up or add dynamic?

The first one that comes to mind is breadcrumbs, I know a lot of people really like having that, but I’ve never been a fan because it distracts from what you really want to be focusing on in mac and cheese. It can be fun if you do it right and not heavy-handed. The only other things some people add bacon or something like lobster if you want to get really decadent and fancy. I like keeping it simple.

How To Make The Ultimate Mac and Cheese According To Nick DiGiovanni

Ingredients:

  • 1 pound cavatappi
  • 3 cups cream
  • 2 cup milk
  • 1⁄2 teaspoon black pepper
  • 1 teaspoon dry mustard
  • 1⁄4 teaspoon smoked paprika
  • 1 large bunch thyme
  • 5 crushed garlic cloves
  • 1⁄2 pound sharp white cheddar, shredded
  • 1⁄2 pound whole milk mozzarella, shredded
  • 1 pound gouda, shredded
  • 1 (4 ounce) log goat cheese
  • 1⁄2 cup grated Parmesan
  • Kosher salt and black pepper

Method:

  • Pre heat the oven to broil and place a rack 4 inches below the heating element.
  • Bring a large pot of water to a boil and season with salt. Add the pasta and cook 2 minutes less than the package directions calls for al dente. Drain the pasta and drizzle with olive oil. Toss the pasta to coat it in the oil, then set aside.
  • In the same pot over medium heat, add the heavy cream, milk, black pepper, mustard, thyme, paprika, and garlic cloves. Stir to combine and bring to a very gentle simmer. Simmer for 20-25 minutes, or until the flavors have married and the dairy is slightly reduced. Set a fine mesh strainer over a large mixing bowl. Pour the infused cream through the strainer and discard any solids. Bring the cream back up to a simmer.
  • While the cream is coming to a simmer, add the cheddar, mozzarella, and gouda to a medium mixing bowl. Toss well to combine the cheeses. Add half of the cheese, as well as the goat cheese, to the cream mixture and stir gently to melt the cheese. Once the cheese is melted, add the macaroni and stir to incorporate. Bring the mixture back to a simmer, then remove from the heat.
  • Add half of the mac and cheese mixture to a 9×13 pan. Then add the remaining half of the cheese over top of the macaroni. Top with the final portion of macaroni, then sprinkle the grated Parmesan over the top.
  • Place the pan on a sheet tray, then transfer to the oven and broil for 5-10 minutes, turning frequently to allow for an equal browning over the top. Once the top is deeply golden brown and bubbling, remove it from the oven and allow it to cool for at least 15 minutes.
  • Once it has slightly cooled, serve immediately. Cooling allows the cheese to set slightly, so the mac and cheese holds its shape when served.

Max/HBO

If you enjoy the Harley Quinn show and/or James Gunn’s The Suicide Squad, you’ll love Creature Commandos. The animated series tracks a secret team of incarcerated monsters — including Frankenstein, The Bride of Frankenstein, and G.I. Robot — who are recruited for missions deemed too dangerous for humans. “When all else fails… they’re your last, worst option,” the Max description reads. Every episode was written by Gunn, while the cast includes Indira Varma, Sean Gunn, Alan Tudyk, Zoë Chao, David Harbour, Maria Bakalova, Frank Grillo, and Viola Davis. It’s a fun introduction to the new DCU.

7. Juror #2 (Max)

Warner Bros. Pictures

Juror #2 received such a tiny theatrical release, we wrote an entire post about how to see it. It’s Clint Eastwood’s possibly final film for chrissakes! Thankfully, the film is now on Max, so more people can watch the throwback legal thriller starring Nicholas Hoult as a jury member going through a moral dilemma. It’s the most 1994 movie of 2024 (complimentary).

6. Squid Game (Netflix)

netflix

Netflix’s most-watched show ever is back. Squid Game season 2 sees the return of Gi-hun (played by Lee Jung-jae), a.k.a. Player 456, who has only one goal: to end the horrifying competition for good. This time, Gi-hun finds himself “locked in a tense battle” with the Front Man (Lee Byung-hun), as well as trying to survive against the other competitors. Squid Game is the rare water-cooler show in the “death of the monoculture” era. Keep up if you want to know what your co-workers are talking about.

Watch it on Netflix

5. The Front Room (Max)

A24

The Front Room failed to make much of an impression at the box office, but maybe it will play better at home? Just don’t watch it with your in-laws: the A24 horror film is about a pregnant woman, Belinda (played by Brandy), who does not get along with her husband’s stepmother (Kathryn Hunter), to put it lightly. The tagline: “All Hell Moves In.”

2. Wallace & Gromit: Vengeance Most Fowl (Netflix)

netflix

War is, generally speaking, bad… but I would not oppose a second Revolutionary War on the U.K. for getting Wallace & Gromit: Vengeance Most Fowl before the U.S. did. Just saying. Feathers McGraw returns in the new claymation masterpiece from Aardman. This time, the evil penguin aims to enact revenge on our cheese-loving heroes for getting him locked up in prison by reprogramming Wallace’s robotic garden gnome.

Future And Young Thug Fans Believe The Long-Awaited ‘Super Slimey 2’ Could Be Coming Soon Thanks To A Producer’s Post

future and young thug.jpg
Getty Image

Ever since Young Thug’s release from Fulton County jail last October after pleading “no contest” to the racketeering charge that kept him locked up for nearly two years, fans have been looking forward to seeing what he does next with his hard-won freedom. They may have gotten a glimpse, courtesy of frequent collaborators Wheezy and ATL Jacob. The former posted a video to his Instagram Story of the latter in the studio with a neon sign reading “Super Slimey 2” behind him.

Longtime Thug fans recognize this as a reference to his 2017 joint album with Future, Super Slimey. A well-received team-up, the project paired the two top voices in the Atlanta trap scene for a project that was commercially successful, if not critically acclaimed. However, it wasn’t long before they began teasing a sequel; Super Slimey 2 would have improved on the formula, according to producer Southside, while adding more manpower in the form of the duo’s young proteges, Gunna and Lil Baby, fresh off their own fan-favorite joint album, Drip Harder.

Of course, if Super Slimey 2 is really in the works, it may not feature all four rappers. While Lil Baby reconnected with Future and Thug on “Dum, Dumb And Dumber” from his new album WHAM (Who Hard As Me), Gunna has been on the outs with his primary partner since accepting an early plea deal that freed him up to continue his career but earned him “snitching” accusations from many in hip-hop — even as Young Thug’s family denied he told prosecutors anything useful to their case against Thug. Future also allegedly sent a few shots Gunna’s way on his own latest project, Mixtape Pluto, although Gunna denied having any sort of beef with the elder rapper. Even Young Thug supposedly said he wasn’t Gunna’s friend, although that could have just been him getting hacked on Twitter or a simple misunderstanding, considering he also asked for a specific exception to his probation terms to maintain contact with him.

Truthfully, it could all just be a result of rap fans reading too much into fairly generic rap boasts, but even if that’s the case, it doesn’t seem we should be looking forward to hearing Gunna on Super Slimey 2, if it really is coming soon.

The Lonely Island Really Wants An Eminem Collaboration To Happen (And Also Bill Clinton)

The Lonely Island have been making a bit of a comeback in recent months. The Andy Samberg-led comedy-music group popped up on Saturday Night Live in October with “Sushi Glory Hole,” then followed it up in November with the Charli XCX-featuring “Here I Go.”

Beyond Charli, the group has quite the list of collaborators that includes everybody from Kendrick Lamar to Justin Timberlake to Michael Bolton. One person they’d really like to add to that list: Eminem.

On a recent episode of The Lonely Island And Seth Meyers Podcast (above), Samberg and Jorma Taccone (Akiva Schaffer was absent from the episode) answered listener questions, and one of them was about who their dream collaborator is, somebody they haven’t worked with yet. Taccone was quick to respond with Eminem, and Samberg agreed.

Samberg also added, “We always said we wanted to get Bill Clinton on sax. That dream still lives. If it ever gets to Bill Clinton — who now is no longer president, by quite a long while, so he might have some free time — if he ever wants to come shred some sax on a Lonely Island track, we’d be very, very excited.”

The Q&A segment also featured some good news for fans of the group. One of the questions was about if the group would ever tour again. Taccone responded, “I’m going to say yes, Andy’s gonna say no.” Samberg added, “I’m going to say hopefully, but no plans.”

Neil Young’s Glastonbury 2025 Boycott Is Over As Quickly As It Started After An Apparent Misunderstanding

Neil Young 2019
Getty Image

Glastonbury 2025 is gearing up to be another notable installment. However, the festival faced a temporary roadblock when Neil Young announced he would be boycotting the event and not performing.

Today (January 3), Neil Young has walked back his public boycott of Glastonbury 2025. Come June, festivalgoers can catch the “Love Earth” musician performing live on the Worthy Farm grounds as part of his band Chrome Hearts.

“Due to an error in the information received, I had decided to not play the Glastonbury Festival, which I always have loved,” he wrote in an updated post. “Happily, the festival is now back on our itinerary, and we look forward to playing. Hope to see you there!”

The “error in the information” Young referred to was Glastonbury’s supposed takeover by the BBC. In his initial post, Young expressed extreme displeasure in the idea.

“The Chrome Hearts and I were looking forward to playing Glastonbury, one of my all-time favorite outdoor gigs,” he wrote. “We were told that BBC was now a partner in Glastonbury and wanted us to do a lot of things in a way we were not interested in. It seems Glastonbury is now under corporate control and is not the way I remember it being.”

Despite the public bashing, BBC seemingly did not release a response to Young’s statement.

Jay-Z Once Suggested Changing The Name Of The Rock And Roll Hall Of Fame To The Hip-Hop Hall Of Fame

jay-z
Getty Image

In recent years, the Cleveland, Ohio-based Rock And Roll Hall Of Fame has done a better job of inducting influential acts that aren’t “rock,” in the traditional definition of the genre. In 2024, it was A Tribe Called Quest and Cher. In 2023, Missy Elliott. In 2022, Eminem. And so on.

When asked whether the name of the museum should be changed to the Music Hall Of Fame, chairman John Sykes told Vulture, “Rather than throwing the name out, [the Hall is] doing a better job of communicating to people where rock and roll came from and what it’s truly about. Once they hear it that way, they understand.”

He then gave a specific example involving Jay-Z.

“The best story to convey this was when a great friend of mine, Jay-Z, got inducted a few years ago,” Sykes said. “I was so excited. But he told me, ‘Rock is dead. It should be called the Hip-Hop Hall Of Fame.’ And I said, ‘Well, hip-hop is rock and roll.’ He goes, ‘No, it isn’t.’ And I said, ‘We’ve got to do a better job explaining it. Little Richard, Otis Redding, Chuck Berry — these artists were the cornerstones of rock and roll. If you look at the sounds over the years, those artists ended up influencing hip-hop.’ Jay-Z hemmed and hawed, but he showed up to the ceremony. That made me feel like we had done our job to communicate that rock and roll is open to all.”

Well, everyone except Chic, Iron Maiden, and The Smiths, that is.

We’re Picking Winners For Week 18 Of The 2024 NFL Season

Tua Tagovailoa
Getty Image

The end of the 2024 NFL regular season is here, even if it technically arrives in 2025. As often, Week 18 is utterly brutal from a handicapping perspective, with a handful of meaningless games, a few more that might only mean something in very specific circumstances, and all kinds of overall uncertainty. In this space, we’ve had a (very) tough season, but Week 17 was mildly successful so perhaps that can kickstart things into the postseason.

Before we endeavor to actually find five angles to share for Week 18, let’s take overall stock.

  • Week 17: 3-2
  • 2024 Season: 33-50-2

Come get these winners.

Atlanta Falcons and Carolina Panthers OVER 48 points — Widely Available

One of the only things that has treated us well this season is Overs in NFC South divisional matchups. Honestly, it’s counterintuitive to recent history in that divisional games usually tend to lean under … but not in the NFC South. This game (and the next one) does have implications for the playoffs in that Atlanta needs to win to stay alive, but the Panthers have been feisty on offense. We can get to 49.

Tampa Bay Buccaneers and New Orleans Saints OVER 43.5 points — Widely Available

NFC South overs. Rinse. Repeat. It helps that I still don’t trust Tampa’s defense, and the Bucs can probably put up 30 here if we need them to do so.

Kansas City Chiefs (+10.5) over Denver Broncos — Widely Available

Yes, I’m aware that the Chiefs are going to rest players. Patrick Mahomes isn’t playing, for example, and that is why the line is where it is. However, NFL roster rules dictate that it’s functionally impossible to rest EVERYONE and this move went too far. Take us home, Carson Wentz.

Miami Dolphins (-1) over New York Jets — Widely Available

Against all odds, Miami is alive in the playoff hunt. Do I trust the Dolphins on the road? Absolutely not, but it helps that they are playing an untrustworthy opponent in the Jets.

Detroit Lions (-2.5) over Minnesota Vikings — FanDuel, DraftKings

Like most of this column, I wouldn’t give this out in a normal week, but the options are limited. Detroit’s defensive situation definitely scares me at the moment, but I trust the Lions offense and what will certainly be a juiced-up crowd in Detroit. If nothing else, I’m looking forward to watching this one.

Sabrina Carpenter Made (And Immediately Broke) A New Year’s Resolution That’s Perfectly On Brand

Today is January 3, which means that just maybe, you haven’t broken your New Year’s resolution yet. If you have, don’t feel too bad, as Sabrina Carpenter made and broke her resolution in the same Instagram caption.

Sharing a gallery of wintry photos yesterday, Carpenter wrote, “new year’s resolution no more dick jokes it’s gonna be really hard.”

This comes fresh off a whole ad campaign based on innuendo: In a new commercial for her own espresso-based Dunkin’ drink, Carpenter discusses shaking her “ess.”

Meanwhile, Carpenter recently discussed her initial expectations for the level of success her hit “Espresso” would achieve, saying, “I remember deciding to put this song out in the beginning of summer and thinking espresso, coffee is kind of more of a fall beverage. I really didn’t know if it would connect, but the sentiment and the sound of the song and the confidence that it kind of just carries along with it was something that I really believed in. So I had literally no idea that anyone would like it, but I liked it, and that was kind of all that mattered to me in that moment, and something I try to remember over and over again.”

Zendaya Was ‘Devastated’ When Beyoncé Didn’t Sing ‘Happy Birthday’ To Her At A Concert (But Still Bought A Poster)

In an example of icons supporting icons, Zendaya owned a Beyoncé poster when she was a teenager.

“I did have a Beyoncé poster on my wall, because I went to her concert for my 13th birthday,” the Challengers actress told W magazine for their annual “Best Performances” issue (it’s a great performance). “I was devastated that she didn’t sing ‘Happy Birthday’ to me, because I guess it was close to her birthday and she was singing to the audience.” (Zendaya was born on September 1st; Beyoncé’s birthday is September 4th.)

When her dad offered to lift her up so she could see Beyoncé better, Zendaya replied, “No, that’s so embarrassing.” After she didn’t give her birthday serenade, however, she thought, “Damn, I should have let him put me on his shoulders so she would’ve seen me.”

But Beyoncé eventually saw Zendaya when they met years later. “I’m proud of myself for speaking at all because I was very nervous,” she previously shared The Hollywood Reporter. “But when I met Beyoncé, that was the only time I’ve ever acted like, real not cool. I just lost my cool. My dad even said it because I was with him at the time and he was like, ‘Dude, you nerded out just then.’ And I was like, ‘I know, I’m being weird.’ Usually I can keep it together.”

When the 2024 edition of Spotify Wrapped came out in early December, aside from personalized user data, Spotify also shared some platform-wide superlatives. When it came to the year’s most-streamed song, that honor want to Sabrina Carpenter’s “Espresso.” That was accurate at the time, but before the year ended, “Espresso” actually lost its top placement.

On Spotify’s list, Billie Eilish’s Hit Me Hard And Soft favorite “Birds Of A Feather” was in third place, behind not just “Espresso,” but also Benson Boone’s “Beautiful Things.” But, as Variety notes, by the time 2024 was over, “Birds Of A Feather” had 1,775,172,881 plays on the year, squeaking past the 1,774,525,704 plays “Espresso” had. That’s a difference of a hair under 650,000 plays, or a difference of less than one percent separating the two songs’ final play counts.

This latest achievement is a fitting end to Eilish’s stacked 2024, which was satisfying for her in more ways than one, as it was a year that saw Eilish have “a lot of good sex.” Beyond that, in just the past few months, Eilish also made it onto Barack Obama’s year-end top songs list, delivered a terrific Tiny Desk Concert, and was named a “dream collaborator” by somebody who themself has been called that many a time: Rihanna.
